Raw Milk Pretreatment Equipment
Milk Collection and Temporary Storage
A milk tanker quick coupling and an inline milk collection flow meter connect the tanker to the receiving line and measure raw milk flow accurately. Refrigerated storage tanks hold the milk at 2 to 6 C to suppress bacterial growth. Tank capacity ranges from 5 tons to 50 tons depending on plant output. These tanks come with level monitoring and automatic discharge systems.
Purification and Standardization
A centrifugal milk clarifier separates impurities, somatic cells, and small fat clusters from raw milk at high speed. A duplex filter removes larger debris further downstream. A standardization tank adjusts the fat and protein ratio to match the raw material standard for each product type.
Sterilization and Homogenization Equipment
Pasteurizers
Pasteurizers come in two forms. Low-temperature long-time (LTLT) pasteurization holds milk at 62 to 65 C for 30 minutes. High-temperature short-time (HTST) pasteurization holds milk at 72 to 75 C for 15 seconds. Both are used for pasteurized milk production and include a holding section and a rapid cooling section.
UHT Sterilization
UHT sterilizers use 135 to 140 C for 2 to 4 seconds. They come in plate heat exchanger and tubular heat exchanger designs. UHT milk can have a shelf life of several months at room temperature.
High-Pressure Homogenizers
High-pressure homogenizers run at 20 to 25 MPa. They break fat globules down to below 2 microns, which prevents fat separation in the finished product. The unit includes automatic pressure adjustment and a safety relief device.
Filling and Packaging Equipment
Liquid Dairy Filling
Aseptic fillers handle Tetra Brik, Combibloc, and aseptic PET bottles for UHT milk. They require an aseptic environment monitoring system and regular aseptic validation. Standard fillers handle glass bottles, plastic bottles, and paper cups for pasteurized milk under cold chain conditions. They include cap tightening and automatic labeling stations.
Equipment for Specific Product Categories
Yogurt production requires a constant-temperature fermentation tank with a stirring system and automatic temperature control, holding 37 to 42 C. Cheese production requires a curd vat, a pressing and forming machine, and a brine tank. Butter production requires a cream separator and a churning and working unit. Condensed milk production requires a vacuum evaporator that removes water at 60 to 70 C to raise solids content. Milk powder production requires a spray drying tower that atomizes concentrated milk into a fine mist and dries it in hot air at 150 to 180 C. It also needs a fluid bed cooler and automatic packaging equipment.
Auxiliary and Storage Equipment
CIP and Water Treatment
A CIP system cleans and sanitizes production equipment and piping automatically. It runs an alkaline wash, an acid wash, and a sterilization step. Only trained personnel should operate it because of the chemical burn risk. A pure water system uses reverse osmosis to produce food-grade water for ingredient preparation and equipment cleaning.
Finished Product Storage and Transport
Cold storage rooms and refrigerated trucks maintain a 2 to 6 C cold chain for pasteurized milk and yogurt. Quality control equipment includes a milk composition analyzer and a microbiological tester for raw material and finished product inspection and compliance verification.
Maintenance and Replacement Parts
Dairy equipment runs under strict hygiene and temperature control. Regular maintenance should cover pump seals, homogenizer valves, heat exchanger plates, filler nozzles, and CIP spray balls. Worn parts affect both product safety and process consistency.
